Nice Vietnamese restaurant

Last night I, and seemingly half of Burlington went and checked out the new Vietnamese place, Dear Saigon for dinner. Thankfully I got hungry and we went a little early because by 6 every table was full and there were a lot of people waiting. They're still in soft opening phase (I didn't realize) and still working some kinks out, like their heater breaking on a freezing day but all the people working were super friendly and the food kept coming out quick, and delicious. We ordered some drinks to start. I got the 3 layer Vietnamese coffee which was very good. My daughter got a strawberry smoothie which she also liked. My wife also ordered the same as I did but I think they forgot about it so she ended up ordering a different one that she said had almost like a creamy shaved ice on the bottom which she liked. For the appetizer we started with their beef carpaccio. This was so delicious. Shaved raw beef with all kinds of spices and red onion and what I assume was a raw quail egg on top. Definitely my favorite of the night. We also all ordered different versions of their satay pho bowls. I went with the rare beef and tendon. Wife went with shrimp and daughter with the rare beef. They were huge and both my daughter and I had leftovers after eating the carpaccio. After a bite or so I realized the broth was peanut based so thankfully I realized and told my wife before Saturday night got ruined (she can't eat peanuts) so they happily swapped it out for a chicken vermicelli plate for her which she said was good. I will say I do usually prefer my vermicelli to be served in a bowl but whatever. That said, I'll definitely come back and make my way through their menu. Oh, plenty of parking in the back so don't get scared off thinking there's nowhere to park
