Back in the late 80s/early 90s (yeah, I'm old) I used to work at a place called Primos Pizzeria. They used to have the best specialty pizzas. Probably my favorite was their Greek pizza, which instead of red sauce has pesto, mozzarella cheese, red onion, and black olives. Then you cook it and when it comes out you put on fresh feta cheese, and tomatoes which are marinated in Italian dressing. So delicious. I like to try and recreate this pizza at other pizza places I go to. Lately I've been going to Artisan Pizza a lot, so I had them try (obviously they don't have the marinated tomatoes so I just put some Italian dressing on myself later). The feta was cut a little different than I'm used to (usually I'll do chunks instead of sliced) and I would have liked some more tomato, but overall it came out pretty tasty. The guys working there seemed to think it looked good and I have a feeling they have made themselves one for dinner to try 😂 If so, I hope you liked it!
